For food products with a moisture content above 10%, the moisture level is generally not a concern for the operation of the oxygen absorber. The absorber can use available moisture within the package to support the reaction.
During this process, the oxygen absorber may absorb some moisture from the surrounding package environment while removing oxygen. A small amount of heat may also be generated, which is a normal part of the oxygen absorption reaction.
